Last week, I was invited to the Boston Center for Adult Education, as Kayem sponsored an event to promote their Artisan Sausage line. Four food truck chefs were invited to make their best dish using one of the Artisan Sausage products. These were paired with different Harpoon beers, but the focus was on the food. A number of local food bloggers were invited and would vote on the best dish, with the winning chef receiving $500. Representing the food trucks of Boston were Heritage Truck, The Dining Car, The Chubby Chickpea and Wow BBQ.
First up was Heritage and they produced Heritage Hash w/ Kayem Artisan Fire Roasted Pepper Jack Artisan Sausage & Fried Egg. Loved this dish, but I’m a sucker for breakfasts and runny egg anyway.
Wow BBQ stepped up with a Field Pepper and Provolone Kayem Artisan Sausage Bahn Mi. Nice work and using a crusty Iggy’s baguette was a good move. Very tasty, though not truly a bahn mi.
Next came the Dining Car with their Smoked Chicken & Kayem Artisan Andouille Sausage Étouffée Poutine. While I said Wow’s was not really a bahn mi, the same would be true with this dish. Replacing potato in the dish was the Dining Car’s Crispy Cauliflower, which the group found very popular.
Finally, The Chubby Chickpea gave us a take on a Cubano with their ‘Angelo DeCristofaro’ Kayem Pineapple Uncured Bacon Artisan Sausage Sandwich. A nice contrast of flavors with a pineapple mostrada, pickled poblanos and porchetta used, in addition to the sausage.
You can see the full recipes for all 4 of these plates on Kayem’s website. Votes were tallied and the winner of this throwdown was David Harnik of The Dining Car. As we were tasting, one blogger remarked this dish would be one way to get her kids to eat cauliflower. Those of you who have had the Dining Car’s crispy cauliflower with curry aioli, know it’s a super bite by itself. David’s amped up version was great.
